WIAW-Mothers day



This WIAW is based on mothers day. For those of us in the UK last Sunday was mothers day; where we celebrate our love for our mummies:) I love my Mum so much and don't know what I would do without her. I will really miss her when I go away to Bournemouth. I treated her to a michael Jackson top, a photo with a picture of me and her in it:


I also got her this journal, called from you to me. My mum has quite bad memory problems, it has gotten worse over the past year to the point where she has sent money to people and not even realised what she was doing. She's still having tests to get a proper diagnosis its not dementia, but is most likely caused by previous overdoses, as a recent scan showed a decrease in her brain matter. So I am always trying to find things that can help with her memory and this seemed ideal; its basically something for her to fill in to tell me all about her life,and what I was like as a child. After I had exchanged gifts. I had my breakfast; I tried the Philadelphia cream cheese and cadburys chocolate and it was so so nice!!!, the other side was honey



Then had a pressing date with my lovely boyfriend. This involved a cycle ride with a tea stop. We usually stop halfway through the ride, the place we planned to go to was actually closed!!! But knowing the area fairly well we cycled to the Cranks Resturant in Totnes. Its a quite famous vegetarian resturant.  Andy had his usual cream tea  which I had a piece off, and I had some wholemeal toast and jam. after the stop we did a loop, overall I think we did 25 miles. Was a fairly easy ride for me, as I seem to climb like a goat in my new bike:p 

Came home showered, and turned from a sweaty cyclist to a less sweaty cyclist. I love wearing red. Think it looks quite nice with blonde hair. 


I had booked us in a local resturant, that is always so hard to get booked in too. At xmas they get fully booked by AUGUST!!!!! They do a really great carvery, and it also pleases me as they do my favourite veggie nut roast:




I had it with a huge side of vegetables:




 Okay this is where I felt the ed was starting to annoy me. I do love the nut roast, but I kind of wanted something different, but wasn't sure how it would turn up, what would be in it etc.  Sometimes the internal battle can be so tormenting,  I just wish I could go out for a meal and choose what I wanted not what the ed wanted. Although it was a really nice meal, and the nut roast is one of the most nicest things that I have tried. It was also really nice to spend some time with my Mum as we don't often get to do, as she never goes out.

Dinner was a butternut squash rissoto that I had made previously, I accidently forgot to take it out the lid, well I did think it would be oven proof clearnly not haha


It was edible though once I had transfered it to a plate, had it with  some goats cheese on top, a veggie sausage and a load of vegetables. 

Before bed I had one of my favourite breakfasts:

I have finally been able to run again!!! I went to a running shop on Monday, and got some amazing advice. I have been in the wrong trainers I am going to do a post about this soon, but I spent nearly two hours trying to find the right shoe.

Past workouts, and loving the breakfasts

Thankyou all for the encouraging words from my last post, lets hope its a supertastic month again. Exercise has really been helping me with my negative thoughts about by body, and just general crapness that I have been having about my current job. I really can't wait to start my new one, a t he people I work with mainly the girls are so bitchy, and its so clicky where I work. everyone knows each other etc, and I don't seem to fit their mould aka I don't drink, go out partying. And I've been dreading going to work and feeling quite depressed when I come home.  So getting some endorphins has been wonderful!!! 

My workouts this past week, have been really great.
Monday- Gym session (5k treadmill run, with some walking, 10 min rower, 15 minute bike and my weight programme
Tuesday-45 mile cycle Ride
Wednesday- 1k swim
Thursday- 2hr cycle ride, practising race skills (average 17mph)
Friday-Swim and Gym session, same as Monday with more streching
Saturday-Rest day-did some yoga and foam rolling OUCH
Sunday-Relaxing 30 mile cycle with my boyfriend which included a cake stop, scones for him crumpets and jam for me.

I've really been loving the cycling, my legs feel so strong at the moment. Really think doing the weights in the gym, gaining weight, and eating more has really helped with my power and endurance levels. I passed some men yesterday which felt good, hehe girl power!!!

 I have decided I am going to enter a sprint triathlon in July too, I need to work on my swimming though as am strong on the bike, and run will be okay as its only a 5k. I just find the breathing side of swimming hard, but today I had a bit of a move forward, and am starting to master breathing underwater!!! It took me a while to even be brave enough to put my head under the water, I thought you actually exhaled when you came out the water, but it turns out you have to exhale whilst in the water. It was scary at first but towards the end of my swim I was mastering it okay, and am now swimming in the middle lane as found the slow lane well, too slow!!!

Yesterday evening, my boyfriend came around and I cooked a beetroot risotto, topped with Feta Cheese:



I griddled some asparagus on my george foreman grill, first time cooking it this way I usually just steam it.

The risotto was fairly straight forward to make. The most difficult part was actually cooking and peeling the beetroot, I have made this before but used precooked beetroot. Anyway here is the recipe

Ingredients:


fresh beetroot
200g rissoto rice
500 ml vegetable stock
100g feta cheese
1 onion
1 fennel bulb
garlic
cinammon stick
carawat seeds
100g spinach


The first thing I did was boil the beetroot until tender this took about 30 minutes, whilst this was doing I 
chopped the onion, and fennel, and put on the rice with the cinammon stick and 1 clove of garlic. I gradually added the stock and kept stirring. 
The caraway seeds were lightly toasted for 1 minute, then removed from the pain. I then wilted the spinach, removed then cooked the onion and fennel until lightly browned,and added 2 tsp of tamarind paste. Finally added everything togeather, placed in bowls and topped with feta and cooked in the oven for about ten minutes. 


My eats for this past week, have also been good. My favourite meal is by far breakfast




Oats cooked with chopped apple, and cinammon. Taste like apple pie;)

 Bran cereal with cottage cheese, apples, granola, and cashew butter
Pre gym light breakkie of soda bagel with almond butter and cottage cheese
Wensydale and cranberry cheese with cottage cheese on toast

I have been feeling so strong whilst out on my bike, and the feeling I get when I come back from a ride in imense.

WIAW-In the pink


So part 2 of my posting of my eats, and today I have had a pink day! anyway who knows me knows I like my pink everywhere I go remembers me for my love of pink and hello kitty! Practically everything I own is pink. Here is a snap shot of some of my pink items:

Even MR GEORGE FORMAN arrived in pink: (who would of thought a boxer would advocate the colour pink)

Todays Eats!

So breakfast was un photographed as it was ate on the go I went to the gym an then had a banana and a soya latte at costa with sugar free caramel I love the new sugar free varieties. 

Lunch was at a cafe and urm I didn't feel like taking a picture sorry. But it was a nice a goats cheese and fig relish sandwich on wholemeal local bread. 

But my dinner was amazing.

Beetroot Risotto with goats cheese


followed by a pink smoothie in a bowl consisting of frozen raspberries, holland and barrats strawberry whey protein some soya milk and soya yogurt. 



My snack tonight will be some veggie sushi!! Haven't had any for a while so thought that I would treat myself:)




Other snacks have been some dried apple which was like eating foam-so nice!
